Different types of BBQ
The Grill
With a wood or charcoal grill, the meat is placed directly over the heat and is cooked very quickly with frequent turning. Many people incorrectly refer to this as barbecuing, but the speed makes a big difference from traditional techniques.
The Gas Grill
Like wood and charcoal grills, the gas grill cooks over direct heat. The difference is this grill gets its heat from propane or butane, which doesn't give the meat the same smoky flavour as wood or charcoal, but it does light much quicker.
The Barbecue Pit
The most popular types of cookers are the Wood Smoker or the Barbecue Pit. A typical pit is usually around 500mm in diameter, up to 1000mm in length and has a firebox at one end. This indirect method of outdoor cooking is perfect for barbecuing as it uses indirect heat and takes much longer.
The Water Smoker
This is a recent addition to the barbecuing scene and is being used more and more. The water is heated to boiling point and the steam bonds with the smoke from wood. This condenses on to the meat giving it a smoky flavour and basting it at the same time, which leaves you with moist and flavourful meats.
